- Fresh milk is received, tested, & standardized according to desired fat content, usually between 4-6%, depending upon the type of paneer being produced.
- The standardized milk is then heated to assure safety and get rid of dangerous bacteria.
- Curds are created by adding acid to milk and separating the curds from the whey.
- Whey is removed from curds and then the curd is pressed to eliminate extra moisture that contributes to the paneer block.
